It doesn’t get any better than cookies for breakfast! Especially when they’re delicious AND healthy! Here’s the recipe below:
Vegan Pumpkin Cranberry Breakfast Cookies
Makes 8 at 227 Calories Each
1 cup organic rolled oats
1 cup oat flour (mill up another cup of rolled oats)
3/4 cup raw pumpkin seeds
3/4 cup dried cranberries (sweetened with apple juice if possible)
1 cup of pure pumpkin puree
2 tablespoons ground flax seed
2 flax eggs (2 tablespoons ground flax 2 tablespoons water for 10 minutes)
1/4 cup maple syrup
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
1 teaspoon sea salt
Preheat your oven to 350. In a large bowl, mix all of your ingredients together. Using an ice-cream scoop, scoop out about 1/4 of the mixture and place on baking sheet lined with parchment paper and press down using the back of your scoop so that you make large round flattened cookies. Bake in the oven for about 15 minutes. Hope you enjoy them!
