I love my Greek salad! I find that restaurant versions of this often miss the mark on the potential for packing in some key nutrients by using iceberg lettuce and skimping on the gorgeous green stuff. This version packs a lot of punch from the basil I include. Did you know that basil is an excellent source of vitamin K, which is super important for your bone and joint health? It also has a lot of calcium, iron and omega 3 fatty acids. Here’s what you need to make this version of Greek Goodness!
2 cups basil, washed and torn in to pieces
1 large English cucumber, skin on and quartered and sliced
1 orange bell pepper, diced
1 red bell pepper, diced
6 large ripe vine tomatoes, diced
1 cup crumbled feta
1 large red onion diced
1 cup pitted kalamata olives
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
2 tablespoons Herbes de Provence
1 lemon, juiced
4 cloves crushed garlic
Toss all the salad ingredients together and shake all dressing ingredients together and pour over the salad and toss again. Enjoy the taste of summer.
